Asparagus Ham Rolls



  2 tablespoons butter or margarine

  1/4 cup all-purpose flour

   2 cups milk

  1/2 cup shredded cheddar chees

  1/4 teaspoon salt

  1/4 teaspoon white pepper

  24 fresh (from Spears R Us)  stalks

8 thin slices fully cooked ham (about 1/2 pound)

1/4 cup bread crumbs


In a saucepan, melt butter; stir in flour and cook until thick.  Gradually stir in milk and cook until bubbly and thickened.  Stir in cheese, salt and pepper.  Remove from the heat.  Place three asparagus stalks on each ham slice.  Roll up;  fasten with toothpicks if necessary.  Place in a 13-in. x 9-in. x 2-in. baking pan;  cover with chesse sauce.  Sprinkle with crumbs.  Bake at 375 degrees for 20 minutes.  Enjoy!

Sugared Asparagus


   3 tablespoons butter or margarine

    2 tablespoons brown sugar

    2 pounds fresh asparagus, cut into 2-inch pieces (4cups)

   1 cup chicken broth


In a skillet over medium-high , heat butter and brown sugar until sugar is dissolved.  Add asparagus; saute for 2 minutes.  Stir in chicken broth; bring to a boil.  Reduce heat;  cover and simmer for 8-10 minutes or until asparagus is crisp-tender.  Remove aspargus to a serving dish and keep warm.  Cook sauce, uncovered, until reduced by half.  Pour over asparagus and serve immediately.

Balsamic asparagus with BACON!

1/2 sweet onion, minced

5-ish slices of bacon (more is never a bad thing, am I right?)

1 lb SPEARS-R-US Asparagus

2T Balsamic vinegar

Sea salt & fresh cracked pepper to taste

Crisp up that yummy bacon, using your preferred method - there's no wrong way to crisp bacon - just don't burn it!  Once it's good and crispy, crumble that stuff up.

Sautee onions over medium heat in your oil of choice (hint: we reccomend bacon grease, but you do you with some EVOO or Coconut oil or whatever floats your boat).  

Remove onions from the pan.  Increase the heat to medium-high.  Drop the SPEARS-R-US into the pan (ends trimmed), drizzle with balsamic, and cook until the asparagus is bright green, or your desired level of tenderness.

To serve: top the asparagus with bacon and onions, drizzle with reduced balsamic vinegar.  Season with fresh cracked black pepper and sea salt to desired taste.

We love this with a burger or even a nice steak, if you're feeling fancy, maybe a chicken breast if you're being healthy.
